I make these pancakes at least once a week.
1 1/2 cup milk
1/4 cup vinegar
1/4 cup melted butter
2 cups flour
1/4 cup natural sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Melt the butter and let it cool down to room temperature.
Put the milk and vinegar into a bowl or jug and set aside.
Place the flour, sugar, baking powder, baking soda and salt into a sieve and sift into a large bowl.
With a whisk, mix the milk and vinegar, butter and eggs together.
Place the wet mixture into the dry mixture and stir with a whisk, do not over stir or mix the batter. It will be a thick batter.
Let the batter sit for 5 minutes while you heat the pan. It is best to have a non stick pan, and do not add any oil or butter. Drop spoonfuls of batter into the pan. Once you start to see bubbles appearing on the cakes, turn them over.
These take very little time to cook.
You can add a mashed banana to the batter, or a grated apple or pear, or even chocolate chips. The options are endless. Enjoy! XX
