1 x Eye fillet role

1 x cheese stick

Mustard (take your pick)

Gherkin

Sweet Paprika

1 sheet of puff pastry

Method

Split the eye fillet down the centre making sure not to go too far, the aim is to add a filling that will stay in the centre of the roll.

Prepare the sheet of puff pastry and set aside and preheat the oven to 170 degrees.

Spread your desired amount of mustard on the inside of the meat followed by a light sprinkling of paprika.  Place the cheese stick and sliced gherkins in the centre and seal together the meat with tooth picks.  Sear the eye fillet on all sides in a greased pan.  Once the sides are seared and sealed, place on a clean plate and carefully remove the toothpicks.  Place the meat roll into the centre of the puff pastry sheet, and wrap like a present.  Place it in the oven for an hour on 170 degrees.

Once cooked, allow the parcel to rest for 5 minutes before slicing.  Enjoy this delicious meal.
