Orange, Date & Cashew cookies w a dash of Flaxseed Meal
1 cup self-raising cake flour
75gm butter, room temperature
1/3 cup caster sugar
1 tbsp orange zest
1 tbsp orange juice
1 tbsp flaxseed meal
1/3 cup raw cashew nuts
1/3 cup dates
Pre-heat the oven to 180 degrees Celsius and place greaseproof paper on a flat oven tray.
Finely chop dates and cashew nuts. Place all ingredients into a large bowl and stir with a wooden spoon until combined. Using your hands, bring the dough together and place on a clean dusted surface.
The dough may seem crumbly at first, but the warmth of your hands as you knead the dough, will start work into the butter and the dough will become pliable. After the dough has come together nicely and is soft and smooth, roll out the dough to a thickness of 1cm. Using a cookie cutter, shape the cookies and place them on the prepared oven tray.
Place your tray into the oven and bake for 10-15 minutes.
