Healthy muffins for the whole family.
1/2 cup Canola oil
1/2 cup natural sugar
1/2 cup brown sugar
1 cup flour
2 teaspoons Cinnamon powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
Half of a large Carrot or Zucchini (finely grated)
1 Apple (finely grated)
1/2 cup Raisins
1/2 cup raw oats
Pre-heat oven to 180 degrees Celsius.
Place the eggs, oil and both sugars into a large bowl and beat on high until the mixture is a caramel color and all the sugar is dissolved.
Sift together all the dry ingredients and add to the wet mixture. Beat slowly until just combined. Lastly, fold through the apple, carrot, raisins and oats. Divide mixture evenly into small muffin moulds or cupcake liners. This recipe will make 12 standard sized cupcakes.
Bake in a pre-heated oven for 15 -20 minutes, or until a small skewer or toothpick comes out clean.
