70gm butter melted and cooled
85gm icing sugar
2 egg whites
60gm plain flour
½ tsp vanilla extract
Pre-heat the oven to 180 degrees Celsius, and prepare two flat trays with grease proof, waxed paper. Prepare a piping bag with a small plain round nozzle.
Sift the icing sugar into a large bowl and add the melted butter, and beat until light and fluffy.
In a separate bowl beat the egg whites until stiff peaks form.
Add half the egg whites to the butter and sugar mixture, and beat until just combined. Then fold in the other half of the egg whites to your mixture.
Carefully fold in the flour and vanilla, until all ingredients are well combined.
Spoon your batter into the piping bag. Pipe your batter into 5 cm lengths (or longer if you wish) onto the waxed paper, and making sure you space them at least 5 cm apart as they will expand whilst cooking.
Finish the batter and place the trays into the oven. Turn down the temperature to 150 degrees Celsius and bake for 15 minutes, or until golden brown.
When ready, take the trays out of the oven and working quickly, lift the paper and transfer the biscuits onto a cooling tray and slip the paper under. If your biscuits cool on the paper, you will find they will not be crisp.
