200ml Coconut Milk (you can use lite coconut milk, but the full version is good for you)
1kg Pumpkin peeled and chopped
200gm Kaukau peeled and chopped (cutting to the same size as the pumpkin pieces)
3 cloves of garlic roughly chopped
1 onion roughly chopped
6 cups of chicken or vegetable stock
A pinch each of Cumin, Sweet Paprika, pepper, and Himalayan salt (or any salt will do)
Heat a small amount of oil in a large pot and lightly fry the garlic and onion for a few minutes. Add the pumpkin and kaukau and cook further until the pumpkin and kaukau start to become softer. Add your spices and stir for a minute allowing the spices to heat through but not burn. Add the stock and bring to a boil. I let mine simmer for 20 minutes.
Allow the soup to cool down enough for the blender or food processor. Process the soup when ready and put it back into the pot and reheat.
This is where you will add the coconut milk and any other seasoning that suits your taste buds. At this point, you can add fresh herbs like parsley or basil for added flavour. You could even try toasted sunflower seeds or pepitas. Enjoy!
