Vegan Cashew & Herb Pesto
½ cup mixed fresh parsley & basil
½ cup extra virgin olive oil
½ cup raw cashews
3 cloves garlic
You will need a blender or a bullet to whiz the ingredients.
Peel garlic cloves and put all ingredients into a blender or a bullet and whiz to your desired consistency.
You can use this pesto for pasta, salad dressings, or it is perfect drizzled onto sandwiches or open subs like I have done, and then placed under the grill.
