Steamed Cheese & Chocolate Cakes
2 cups plain flour
½ cup raw sugar
1 tbsp baking powder
¾ cup evaporated milk
½ cup water
½ cup condensed sweetened milk
4 tbsp melted butter
¼ chocolate cheese

Prepare your steamer with water and a spare cloth to cover. Prepare 24 small moulds, or 12 medium by oiling them lightly with either sunflower or canola oil. I used different small glass bowls and some cake moulds, just to be different…
Sift the flour, sugar and baking powder into a large bowl and set aside.
In a separate bowl whisk the evaporated milk, water, butter and egg and add to the dry ingredients. Whisk until there are no lumps. Fold in the chocolate chips and spoon into your moulds.
Put the cheese into the middle and on the top of the batters. If you do it now, the cheese will sink and dissolve into the cake which I love, or you can put the cheese on top at the end of the steaming process.
Steam the cakes for 20 minutes, if apply the cheese at the end, steam for 1bout 18 minutes and then put your cheese on top and close the lid and continue to steam for a further 2 minutes.
Enjoy these light, sticky and sweet cakes, they are so delightful to eat with a coffee or hot chocolate.
