Butter bean and Broccoli Salad

simple dinner amazing flavours


1 x 400gm can of Butter beans (or any other type of soft bean)

Juice of 1 fresh lemon

Half an onion finally chopped

4 tablespoons olive oil

2 tablespoons good honey

Half a head of Broccoli

Salt and pepper to taste

Handful of chopped fresh mint

Drain and rinse the can of beans.  Cook the finely diced onion in the olive oil – on very low heat, for 5 minutes.  Add the lemon juice and salt and pepper to the onion mixture, set aside to cool slightly.  Place the rinsed butter beans in a large bowl and add the chopped mint, then add the lemon and oil mixture and honey.  Place the bowl in the fridge to marinate.  The final step is to boil water and blanch the broccoli for 2 minutes and place into cold water to stop the cooking process, add the broccoli to the bowl of beans and return to the fridge for another hour.  The longer the salad keeps in the fridge, the tastier the salad will be and bringing the salad to room temperature before eating is even better for the flavours.
