This is by far one of the easiest recipes and one of the tastiest to whip up in 10 minutes.
1 packet of Soba noodles (the one I usually buy is 270gm)
3-4 cloves of garlic finely chopped (more of less depending on your liking)
1/4 cup Kikkoman Soy Sauce (I don’t use any other soy)
1 tablespoon raw sugar (Ramu is perfect)
1 tablespoon honey
2 tablespoons rice vinegar
2 tablespoons sesame oil (you can add another spoon if you want extra)
3 tablespoons canola oil
2 tablespoons cold water
Start by boiling water in a large pot for the soba noodles. While waiting for the water to boil, put all the other ingredients together in a large bowl and whisk together making sure the sugar dissolves.
Once the water has boiled, add the soba noodles and boil for 4-5 minutes. Drain and put in a large salad or pasta bowl, add the dressing and toss together and sprinkle some toasted sesame seeds over the top for garnish if you like.
If you wanted to convert this into a cold salad, you would chill the noodles and the dressing separately. When chilled, you can add any foods you like such as shredded chicken, roasted smashed peanuts or cashews, spring onions, shredded Wombok cabbage and or thinly sliced carrots, even some thinly sliced chillies for heat. Toss all chilled ingredients together and it would make a beautiful cold salad. This is such a versatile recipe. Enjoy and let me know how you go, I would love your feedback.
