250gm melted butter
1 1/3 cup plain flour
3/4 cup sifted cocoa powder
1/4 teaspoon baking powder
2 1/4 cup natural sugar
1 tablespoon Himalayan Salt (or any other good quality salt – Iodised table salt does not qualify here as it is too salty)
1/2 cup dried cranberries (or any other dried fruit that you like)
1/2 cup shredded coconut (dessicated may work, but shredded or flaked gives a nice texture)
1/2 cup dark chocolate chips
Place all of the above ingredients except the salt, cranberries. chocolate and coconut, into a blender.
Do not over blend.
Once the batter is just blended, pour it into your square or rectangle baking dish – I use a Tupperware rubber mould that does not require any greasing or flour.
Scatter the cranberries, coconut and chocolate over the top of the batter and very gently swirl the topping into the batter – do not over mix. The last thing is to evenly sprinkle the salt over the batter.
Bake in a preheated oven at 170 degrees for 45-50 minutes.
Let the brownie cool before turning out and slicing.
You can substitute the last three ingredients for nuts or other dried fruits. Use your imagination and your preferred taste, but do use the salt because they are ‘salted’ brownies!
