You can have your burger and eat it too. This is my version of a ‘healthy’ burger. Lamb and roasted pumpkin sandwiched between two giant mushrooms that have been par-grilled with olive oil and fresh garlic. I am not a fan of overly cooked mushrooms, I like to maintain as much nutritional value in my food. You may also notice that the pumpkin still has it’s skin… This is as good as it gets in terms of healthy, wholesome and low fat.
