Rarely do I sit down for lunch, it’s usually standing, putting something together very quickly, walking around and taking a spoonful here, a bite there before I am off again.

But then there are days where I have a bit of time and a few ingredients and I can whip up a quick healthy meal.  Cauliflower fried rice is my favourite carb-free meal, it’s especially good with spinach and Tabasco.

I usually have grated cauliflower in a bowl in the fridge ready for quick meals like this, the cauliflower can last for a few days covered and chilled, and it’s perfect for those times where you are super hungry at lunch, because you only had grapefruit for breakfast and you only have to worry about feeding yourself because no body else in the household will eat cauliflower fried rice… 🙂
