Once you have a Medjool Date, there is no turning back! They are amazing to eat just as they are, imagine how wonderful they are baked and cooked. They are a real treat, and when I opened my colourful box, the dates were beautifully packed with their own wooden tongs… so nicely presented they were almost too good to remove.
I made this dense cookie slice out of oats and these Medjool dates and a glaze of maple syrup – so much caramelization happening in these little squares. Great with tea or coffee, in fact the dates were stewing in a cup of jasmine tea before being blitzed into a silky mixture. A lot goes on behind making simple little treats.
