Banana bread is one of those joys in life… it’s usually cut into the thickest slice possible (no less than two fingers), and loaded with half melted butter and sometimes Nutella. However, when you are cutting out bread and cakes from your diet for a week (like I am), banana bread is out of the question… But is it? I remember reading a great recipe with which I folded the page so that I could always go back to it and give a try. Buckwheat banana bread with blueberries and chia… it’s not carb free, but it’s naturally sweetened with honey, and it uses buckwheat rather than plain flour, so this bread is completely gluten free and I like to think guilt free as well. So it’s not diet food, it’s just healthier eating – not a bad compromise.
