I don’t know anyone who doesn’t like a spongy lamington, it’s that teaser of an icing which is enough, but not enough. So what I did was customise the lamington slice to have a good thickness of chocolate decadence and I let it snow with organic coconut. Did I mention this little beauty is made from wholemeal spelt flour? I am excited about this because this will be the only treat in this town using spelt flour and tasting this cute. 😉
