The Asian version of Vanilla…


The Pandan flavour is one of my favourite, if I had to describe it to someone that is not familiar with the flavour, I would say ‘imagine coconut and vanilla together.  The Pandan extract is a rich green shade and makes any dessert look amazing and colourful.  I have never seen a Pandan muffin, it is usually used in Asian style sponge cakes and puddings, so I decided to create one.  The melting pot of colors and soft flavours and gooey as well as crunchy textures, made for a moreish muffin, and I would suggest they are better with a chai latte or even lighter than that, just a simple cup of jasmine tea.

Muffins can be anything you want them to be.
