Fruit & veg baked in spelt & coconut flour…


Zucchini has turned into a dessert… I use it more in cakes and muffins than I do as a vegetable and it’s great because it does add nutritional value, and more importantly to those that just want a ‘sweet’, it makes all things sweet just a little bit sweeter.  The juice from the zucchini creates a bit of syrupy mush.

Today was all about flavour, so the orange and coconut came through quite nicely and the spelt and coconut flour give beautiful texture to the final bite.  These are going to sit in a display cabinet at the Edge café, probably not for long as most FTG things tend to finish up before lunch, and I thought this would be a nice little mid morning treat for the public holiday.
