You cant beat home made crumpets. They are so easy to make and just made from flour, water, yeast and milk. Mine however, are made from Spelt and Quinoa flour with just a little bit of plain flour, so they are not completely gluten free, but they contain much less gluten than a regular crumpet. I have kept it real simple with some good plain butter and a drizzle of maple syrup. Just writing about it, makes me want to eat ‘another’ one!
