The little monster always indicates a scrumptious and indulgent treat. Ricotta is flavour of the month for me, it doesn’t have a great deal of flavour, but when it’s used in baking, it seems to add the most incredible amount of moisture. Ricotta and berries are an arrangement marriage and it works so well.
Let’s not forget to mention that these muffins contain quinoa flour and coconut sugar, two great ingredients that classify these muffins as ‘healthy’. Quinoa is gluten free, high in protein and iron, and coconut sugar has a low GI.
Now I should also mention that coconut sugar is not available locally, but you could always substitute with raw or brown sugar.
