Mondays are Tabata day, so I want to come home to an easy dinner. Before heading out to class, I prepared my chicken with yoghurt and an Indian tandoori spice mix. When I returned home, I chopped some Kau Kau (sweet potato) and mixed it into the chicken and baked together in one pan for an hour. Side salad was so simple, chopped walnuts, flaked coconut, apples, haloumi, baby spinach and lemon juice and olive oil.
