Yes it’s a muffin, but it’s not your everyday type of sweetness. The bulk of the muffin is flavoured with super over-ripe and totally sweetened bananas, and oddly crushed raw hazelnuts, and the topping is whole hazelnuts that have marinated in passionfruit pulp. What I loved about this, was the baking process where part of the passionfruit pulp caramelised the nuts and the top of the muffin and then some gracefully crept over the sides creating a delightful sticky mess. Some may not be so impressed with this, but I love things that look, feel and are home made. Every little cake has character.
