Spiced Potato Hash with Red Onion & Grilled Egg


I made a spiced potato hash with Spanish onions and grilled egg this morning for my husband.  He laughed because he was grateful for the gesture but knew he would have to wait until it was photographed to get into it…

To the hash, I added my own blend of spices using Cajun, chilli flakes, Himalayan salt, dried rosemary and caraway seeds.  This blend of spices can be used in so many ways and there is no real heat to it, just lots of flavour – I especially like the caraway seeds.  This spice mix can be added to vegetables before roasting, or it can go over hot chips – Kau Kau chips would be the best!  Have a great weekend and let us know what’s cooking in your kitchen.
